We’re finally on the weekend and what could be better than having a little time to get into the kitchen and prepare some good banana bread. In addition, as we know, bananas are an excellent fruit for our health.

With its 90 kcal per 100g and its 19.7% carbohydrates, it provides an immediate boost.

It is a fruit particularly rich in nutrients. The banana contains almost all those of group B essential for the proper functioning of the body, in particular vitamins B1, B2, B3 and B5 which fight against physical and intellectual fatigue. As well as toning vitamin C.

It also contains 13 different minerals including magnesium, iron and phosphorus. So there are many reasons to prepare good banana bread.

Preheat the oven to 180°C, top and bottom heat, and butter the mold. To melt the butter. Mash three-quarters of the bananas with a fork.

Beat the eggs, mix them with the mashed bananas then incorporate all the remaining ingredients. Mix well. Pour the batter into the mold and smooth it out. Divide the remaining bananas in half, lengthwise, and press the halves lightly into the dough.

Cook for approx. 50 min in the middle of the oven. Test for doneness with a needle. Take out of the oven and let cool down. Depending on taste, serve the banana bread with a topping of your choice. I like to spread butter on the top.

Ingredients:

  • Butter for the mold
  • 120g Butter
  • 4 Ripe bananas
  • 2 Eggs
  • 120g Raw sugar
  • 180g of flour
